Italian Minestrone Soup
This is a delicious Italian soup in its vegetarian (Lenten) version. Italians also prepare minestrone with meatballs.
This garlic soup is distinguished by its rich aroma and lightness. The garlic is thoroughly cooked, which prevents any unpleasant odor after consumption.
Pass the garlic through a garlic press. Place the minced garlic in a heavy-bottomed pot, add olive and butter, and chopped onions. Cook over medium heat, stirring, for about 20 minutes.
Sprinkle the vegetables with flour, mix thoroughly, and cook for a couple more minutes. Then pour in the broth, vinegar, and 1 liter of water. Bring to a boil and simmer over low heat for about 30 minutes.
