This delicate creamy pea soup is prepared from fresh green peas with the addition of aromatic mint and cream, giving it a refreshing taste and creamy texture.
Instructions
1. In a large heavy-bottomed pot, melt butter over low heat. Add onion and cook, stirring, for about 10 minutes, until softened and lightly golden.
2. Add green peas to the pot with the onion, sprinkle with sugar and half of the total mint, then cover with broth. Bring the mixture to a boil, then reduce heat, cover the pot, and simmer for 10-15 minutes until the peas are tender.3. Remove the pot from the heat and let the soup cool slightly. Then add the remaining mint and puree the pea soup in a blender or food processor until smooth. Pour the pea cream soup back into the same pot, season with salt and pepper to taste.4. Stir cream into the pea cream soup and heat until hot, but do not bring to a boil. Serve the pea cream soup in individual bowls, garnished with chopped chives.
