Creamy pea soup with tomato juice has a pleasant tartness and a delicate, velvety taste. This pea soup is very simple and easy to prepare.
Instructions
Prepare the necessary ingredients. Boil water.
Sort and rinse the peas. Cover the peas in a pot with hot water and place over heat to cook. Cooking time for peas depends on the variety, processing method, and dryness. Be sure to read the cooking instructions on the package.
Peel the onion and cut into small cubes.
Heat olive oil in a frying pan, add the onion, and sauté until soft and lightly golden.
Once the onion is sautéed, immediately add it to the pot and continue cooking until the peas are done. In total, I cooked the peas for 40 minutes.
Remove the pot from the heat and purée the peas with the onion using an immersion blender.
Add tomato juice, salt, and pepper to taste. For flavor balance, it is recommended to add a teaspoon of sugar.
Return the pot to the heat, bring the creamy pea soup with tomato juice to a boil, and simmer over low heat for another 5-7 minutes.
When serving, garnish the creamy pea soup with tomato juice with a parsley leaf and drizzle with olive oil. Enjoy your meal!
