Creamy Pea Soup with Tomato Juice

Creamy pea soup with tomato juice has a pleasant tartness and a delicate, velvety taste. This pea soup is very simple and easy to prepare.

Instructions

Prepare the necessary ingredients. Boil water.

Sort and rinse the peas. Cover the peas in a pot with hot water and place over heat to cook. Cooking time for peas depends on the variety, processing method, and dryness. Be sure to read the cooking instructions on the package.

Peel the onion and cut into small cubes.

Heat olive oil in a frying pan, add the onion, and sauté until soft and lightly golden.

Once the onion is sautéed, immediately add it to the pot and continue cooking until the peas are done. In total, I cooked the peas for 40 minutes.

Remove the pot from the heat and purée the peas with the onion using an immersion blender.

Add tomato juice, salt, and pepper to taste. For flavor balance, it is recommended to add a teaspoon of sugar.

Return the pot to the heat, bring the creamy pea soup with tomato juice to a boil, and simmer over low heat for another 5-7 minutes.

When serving, garnish the creamy pea soup with tomato juice with a parsley leaf and drizzle with olive oil. Enjoy your meal!

Pumpkin and Pea Soup

Soak dried peas overnight. Then, change the water and cook them until partially done. Add diced potatoes, and after 15 minutes, add sautéed chopped root vegetables and diced pumpkin. Season with salt to taste and cook for another 5-10 minutes until the pumpkin becomes translucent. Serve the finished soup immediately. Zucchini or pattypan squash can be used instead of pumpkin.

Surprise Porridge

Peel the peas and cook them in 3 cups of salted water until almost done. Stir in semolina and cook for 5 minutes. Then pour in milk and add butter. Before serving, sprinkle with finely chopped lemon balm. To prevent milk from burning, rinse the pot with cold water before boiling.
