Pea Soup with Vegetables, Pearl Barley and Meat

Pea soup made with beef ribs, enhanced with vegetables and pearl barley.

How to prepare pea soup with vegetables and pearl barley:1. Separate the ribs, remove meat from bones, place ribs in a large pot, add half of the coarsely chopped onion, cover with water, salt, pepper, and bring to a boil over high heat. Simmer the broth over low heat for about an hour.2. Meanwhile, remove fat from the meat and cut the pulp into small pieces. Finely chop the remaining onion.3. Strain the broth and pour it back into a clean pot, add water so that the total volume is 2 liters. Add the meat, onion, pearl barley, and peas to the pot with the broth.4. Bring the broth to a boil, skim off any foam, and salt to taste. Reduce heat, cover the pot with a lid, and simmer over low heat for about 30 minutes.5. Add carrots, turnips, celery, and leeks to the soup, cook the pea soup with vegetables for another 1 hour, until the meat is tender. Season the finished soup with salt and pepper to taste.6. Cabbage Soup with Canned Peas and Pasta (Beef Broth)

I prefer vegetable soups made with beef broth. If the broth is prepared in advance, cooking the main dish will take minimal time. You can add any seasonal vegetables to the soup according to your taste. This time, I prepared a soup with white and cauliflower, as well as canned green peas. Fresh herbs serve as a bright and aromatic addition to the dish.
