This is a delicious Italian soup in its vegetarian (Lenten) version. Italians also prepare minestrone with meatballs.

How to prepare Italian Minestrone Soup:1. In a pot, sauté the onion and garlic in olive oil until the onion is soft.2. Add 1 teaspoon of salt, carrots, celery, bell pepper, and zucchini (or courgette). Mix well.3. Add oregano, black pepper, and basil. Cover with a lid and cook over low heat for 5-8 minutes.4. Add the remaining ingredients and wine. Cover with a lid and cook until the potatoes are soft. When serving, minestrone can be garnished with fresh parsley and sprinkled with 1 tablespoon of Parmesan cheese (optional).
