Classic Pea Soup
A rich pea soup that can be served either traditionally or as a delicate purée soup.
Peel the peas and cook them in 3 cups of salted water until almost done. Stir in semolina and cook for 5 minutes. Then pour in milk and add butter. Before serving, sprinkle with finely chopped lemon balm. To prevent milk from burning, rinse the pot with cold water before boiling.
