Cold Tyurya with Baked Onion and Kvass

A refreshing tyurya made with light kvass, dark bread, vegetables, and herbs — an ideal dish for hot summer days! This cold bread soup is similar to okroshka but simpler to prepare and contains fewer ingredients. The Borodinsky bread base provides heartiness, the combination of cucumber, baked onion, garlic, and herbs imparts a special flavor, and the cold kvass is pleasantly refreshing. Give it a try!

Instructions

Prepare the ingredients. For this dish, it's best to use day-old, slightly stale bread. Preheat the oven to 180 degrees Celsius (350°F).

Peel the onion and cut it in half. Brush the onion halves with vegetable oil and place them cut-side up on a baking sheet or in a baking dish. Transfer the dish to the preheated oven and bake the onion at 180 degrees Celsius (350°F) for 15-17 minutes, until soft. Then remove the onion to a plate and let it cool. (To save time, the onion can be baked in advance.)

Peel the garlic, sprinkle with 1 pinch of salt, and crush into a paste using a mortar and pestle. Alternatively, finely chop the garlic and mash it against a cutting board with the flat side of a knife.

Finely chop the green onion and dill. Add sugar and 1 pinch of salt to the chopped herbs. Mix and mash with a pestle or spoon until the herbs release their juice and become softer and more aromatic.

Cut the bread into small cubes.

Cut the cucumbers and cooled baked onion into small cubes. All components are ready – you can now assemble the dish!

Place a portion of the diced bread into a bowl.

Add 1-2 tablespoons of diced cucumber and a small amount of diced baked onion (to taste).

Layer some crushed garlic over the bread and vegetables.

Add 1-2 tablespoons of the dill and green onion mixture.

Pour in the chilled kvass.

Add 1-2 tablespoons of sour cream, and drizzle the dish with a drop of aromatic vegetable oil.

Taste the dish and adjust seasoning if necessary by adding more salt, garlic, or herbs. The tyurya with baked onion is ready. If desired, garnish the finished dish with a small sprig of dill. Bon appétit!
