Cold soups are especially relevant in summer. We suggest preparing a refreshing soup made from fresh and lightly salted cucumbers with garlic, cilantro, matsoni, and sour cream. Mint adds extra freshness and aroma to this cucumber soup.
Instructions
Prepare all ingredients. Freeze water in advance to get ice cubes. For lightly salted cucumbers, you can use the recipe provided or prepare them to your liking.
Peel the fresh and lightly salted cucumbers. Cut them into small pieces.
Place the diced cucumbers into a blender cup.
Peel the garlic clove. Finely chop the cilantro. Add ice cubes, cilantro, garlic, and sour cream to the cucumbers. Pour in the brine from the lightly salted cucumbers and matsoni. Add sugar, ground chili pepper, and salt.
Blend all ingredients until smooth. Transfer the soup to a lidded container and refrigerate for 1.5-2 hours to chill completely.
For serving, peel a fresh cucumber and dice it into small cubes.
Wash the mint leaves, pat dry with a napkin, and chop finely.
Mix the chopped mint with the cucumber pieces. Drizzle with vegetable oil and stir again.
Pour the chilled cucumber soup into a deep bowl. Place the diced cucumber with mint in the center of the bowl. Garnish with a mint leaf and serve. Serve with salty crackers or toasted bread. Enjoy your meal!
