Dried Yellow Pea Puree Soup
A simple and hearty dried yellow pea puree soup, complemented by aromatic fried onions and fresh herbs.
A light and aromatic cream soup made from fresh green peas, prepared with butter and milk.
Shell and wash the green peas. Peel and finely chop the onion. In a pot, melt butter, sauté the chopped onion, add flour, and stir. Pour in the broth, bring to a boil, add the green peas, and cook until tender, seasoning with salt. Remove a portion of the peas, then purée the remaining peas with the soup using a sieve or blender until smooth. Pour the soup back into the pot, add the reserved peas, and bring to a boil. Stir in hot milk and remove from heat. Ladle the ready soup into bowls, sprinkle with chopped parsley, and serve.
