Lentil soup with tomatoes is a very delicious and aromatic dish. Its only drawback is that it always runs out too quickly.
Instructions
Prepare all ingredients for the lentil soup with tomatoes.
To prepare the soup: Rinse the lentils and cook them until tender in 3 liters of water.
Peel, wash, and dice the potatoes. Add them to the pot with the lentils and cook for 15-20 minutes.
Peel and wash the carrots and onions. Dice the onion, and grate the carrot on a coarse grater.
Heat a pan, add vegetable oil. Sauté the onion and carrot, stirring, for 3-4 minutes over medium heat. Then add flour, stir. Add tomato paste and sauté, stirring, for 1 minute.
Transfer the sautéed vegetables to the soup pot.
Peel the bell pepper and garlic. Wash the herbs, bell pepper, and green onion. Slice the bell pepper into strips, grate the garlic. Finely chop the herbs and green onion.
Add the prepared vegetables to the soup, season with salt and pepper to taste. Add a bay leaf. Simmer over the lowest heat, covered, for 5 minutes.
The lentil soup with tomatoes is ready. Before serving, be sure to place a lemon slice in each bowl of soup. Bon appétit!
