Solyanka with sausages is a delicious, quick, and easy dish. After making it once, you'll master the process. This is a student version of solyanka – a recipe without frills.

Instructions

When I make solyanka, I end up with two dishes because broth needs to be cooked, but I don't like boiled meat in soup/solyanka. Therefore, I buy pork ribs and prepare solyanka, while baking the pork ribs in the oven. This is a student solyanka, so we use sausages, not various cured meats. While the ribs are cooking, you can cut the sausages into small cubes.

Then chop the onion, grate the carrots and pickled cucumbers. Grating cucumbers saves time, and the taste is not lost, although there won't be a crunch. If you prefer sliced cucumbers, cut them.

I boil the ribs for 50 minutes. After 40 minutes of cooking, start frying the sausages for about 5 minutes.

Then sauté the onion for one minute.

Add the carrots with cucumbers and sauté for about 3 minutes.

Add tomato paste. Simmer for 6-7 minutes. Transfer the fried sausages, carrots, onion, and cucumbers to the pot where the ribs are no longer – they are set aside, marinated for the oven.

Chop the herbs (add a little to the pot), olives, and lemon. I also put 5-6 whole olives into the pot with the solyanka to cook.

Let all this cook for another 10 minutes, then remove the solyanka from the heat, let it steep for 10 minutes, and it's ready to serve. It turns out very tasty in 1.5 hours, no more. And after 2-3 hours, you can preheat the oven and put the ribs to fry, or you can fry them immediately while the solyanka is cooking and steeping.
