Green pea purée soup with fresh mint and cream. This vibrant cream soup will delight both adults and children.
Instructions
Prepare the green peas for the cream soup. You can use either fresh or frozen peas, without defrosting them beforehand. Use store-bought cream with a fat content no higher than 30%.
Rinse the green peas and transfer them to a pot, cauldron, or saucepan. Add a couple of pinches of salt; optionally, you can add a pinch of ground black pepper, dried garlic, or thyme.
Rinse two or three sprigs of fresh mint and add them to the pot as well. (If fresh mint is unavailable, use dried mint.) Pour in water and cook the peas for 5-7 minutes from the moment it boils.
Remove the pot with peas from the heat and remove the mint sprigs.
Set aside a few teaspoons of peas on a saucer for garnishing the soup. Transfer the contents of the pot to a deep container and purée with an immersion blender until smooth.
Pour the green pea purée soup into a deep bowl, add cream. Garnish the cream soup with the reserved peas and fresh mint leaves. Serve the purée soup hot, with black bread croutons. Enjoy your meal!
