This delicious soup can be prepared in both a diet-friendly and a more caloric version.

How to prepare pumpkin cream soup: Peel the pumpkin and cut it into cubes. Also, peel and cut the potatoes.
Cut the bacon into cubes and fry it in a non-stick pot (no oil is needed as fat will render). Set aside the fried bacon in a small bowl; it will be used later. If you are preparing a diet soup, skip this step!
Chop the onion. There's no need to chop it very finely, as everything will be blended later. Add a drop of oil to the pot and sauté the onion until golden.
Add the pumpkin and potatoes to the pot, and sauté them slightly.
Pour in hot vegetable broth until it covers the vegetables by approximately 2 cm.
Cover with a lid and cook until the vegetables are tender (20-25 minutes). Turn off the heat.
Blend the soup until smooth.
Add cream and mix well. Again, if you are preparing a diet version, do not add cream.
Finely chop the green onions and parsley.
Grate the cheese.
Pour the soup into each bowl. Add fried bacon, cheese, herbs, and croutons to the pumpkin cream soup. Enjoy your meal!
