Peel and slice the zucchini, place it in a pot, cover with water, and simmer for 10 minutes. Shred the onion, julienne the carrot, sauté in clarified butter with tomato paste, then add to the zucchini. Add the pre-soaked peas and rice. 5 minutes before readiness, add a bay leaf, salt, and pepper to the pot. Before serving, garnish the soup with sour cream and chopped parsley.
