An interesting quick soup recipe that cooks as fast as possible and turns out very tasty. Its base consists of three ingredients: sausages, canned red beans, and pasta. It's a potato-free soup, but that doesn't stop it from being hearty and nutritious – beans successfully play the role of potatoes!
Instructions
Prepare the necessary ingredients. For this soup, it is better to use small pasta, such as shells. Drain the marinade from the canned beans. If you are using beans in tomato sauce, you do not need to add tomato paste.
Peel the onion and cut it into small cubes.
In a heavy-bottomed pot, heat the vegetable oil. Add the onion and sauté until translucent and lightly golden, about 3-4 minutes over high heat.
Peel the sausages and slice them into rounds.
Transfer the sausages to the onion and sauté, stirring, for another 2 minutes.
Then add the canned red beans and tomato paste to the pot.
Add salt, ground black pepper, and dried basil.
Continue to sauté the combined ingredients for another 2-3 minutes, stirring constantly.
Then add the dry pasta to the pot.
And pour in 1 liter of boiling water.
Bring to a boil, reduce the heat to minimum, and let the soup cook until the pasta is done, approximately 8 minutes. Remove the finished soup from the stove.
Ladle the soup with pasta, beans, and sausages into bowls.
When serving, this soup can be sprinkled with chopped herbs.
