This aromatic soup is prepared with scallops and halibut, and is complemented with mussels when served.
To prepare seafood soup: 1. Cut the halibut fillet into 2.5 cm pieces, and slice the scallops in half or into quarters. 2. In a large saucepan, heat olive oil, then add the diced onion, bell pepper, and garlic. Cook, stirring, for about 5 minutes. 3. Next, add the tomatoes, broth, 1 cup of water, corn, cumin, and 1/4 teaspoon of pepper. Bring to a boil, reduce heat, cover the pot, and cook for 10 minutes. 4. Add the fish and scallops to the pot, bring to a boil again, and cook the seafood soup for 3-5 minutes. 5. Add mussels, chopped cilantro or parsley to the finished soup, and serve immediately. Before serving, sprinkle the seafood soup with black ground pepper.
